If you are looking for a fun experience in Positano, and are interested in creating some of the regional cuisine at home, consider taking this fun cooking class.

Hotel Buca di Bacco in Positano, which is where we stayed this past summer, offers a two hour cooking class most afternoons in the kitchen of their well known restaurant. Students, lead by chef Luigi & chef Andrea, learn how to make a 3-4 course menu consisting of a starter, two main dishes, and a dessert. During our class we made eggplant parmesan for our starter, gnocchi with pesto for our second course, as well as individual pizzas, and an amazing chocolate hazelnut cake for dessert. Depending on the size and dynamic of your group, the wine and champagne can flow pretty freely during the class. Because we met some friends in Positano this year, our group of 10, including four children between us, took up the entire 10 spots of the class that day. Anyway, all six of us adults definitely enjoyed ourselves. At the end of class, all the participants have the meal together at a large table and celebrate the fruits of their labor.

The tomatoes in Italy are so red and so sweet they are like candy. Above is the tomato sauce we made for the eggplant parmesan and the pizzas. Also pictured is the pesto gnocchi. The texture of the gnocchi resembled the feeling of clouds floating in your mouth so tender and light. The pesto had a fresh nutty taste which created a nice flavor balance.

Everybody made their own custom pizza with the toppings they like.
